I have just setup NLB for two servers but when I enable the cluster it kills internet access on both. Any idea why that would happen? Can't seem to find much by searching around.

NLB has problems with some NIC teaming software. If you have that installed try removing it. Or changing the cluster from Unicast to Multicast.

Thanks. Changing it from unicast to multicast made it work. What is the difference between the two? Does it matter which I use?

Basically unicast sends traffic to one specific location on the network, whereas multicast sends traffic to all locations on the network.

Also, unicast will replace the original MAC address on both interfaces with a new one (they'll have the same one) whereas multicast adds a layer 2 MAC address so that each interface will have 2 MAC addresses (it's real one and the new NLB generated one).
